Kaki no Dotenabe is a local Hiroshima dish (nabe dish) in which oysters, tofu, and vegetables are simmered in miso paste around the pot [1].
牡蠣の土手鍋(かきのどてなべ)とは、鍋の周りに味噌を塗りつけ、カキと豆腐や野菜を煮ながら食べる広島県の郷土料理(鍋料理)[1]。
Shellfish and vegetables simmered in miso are generally called dotenabe'' or
dotenabe style”, but originally raw oysters were used and Fuchu miso was placed around the inside of the pot like a bank. A hot pot dish made by coating it with oysters is called ‘Oyster Dotenabe’ or ‘Dotenabe’. (Quoted from Wikipedia)
貝類と野菜を味噌味で煮たものが、一般的に「土手鍋」あるいは「土手鍋風」と呼ばれているが、本来は生ガキを用い、府中味噌を鍋の内側の周りに土手のように塗って作る鍋料理を「カキの土手鍋」あるいは「土手鍋」という。(Wikipediaより引用)
Oyster hot pot on this day! It is lightly tailored with white miso instead of Fuchu miso. It goes well with ponzu and citrus. The leftover oysters were grilled! It’s delicious boiled or baked! Oysters are so nutritious that they are called the milk of the sea. It is also good for anemia prevention because it is rich in iron and zinc.
この日は牡蠣鍋!府中味噌ではなく白味噌であっさり仕立てです。ポン酢やすだちがとても合います。余った牡蠣は焼いていただきました!煮ても焼いても美味しいです!牡蠣は海のミルクと呼ばれるほど栄養満点。鉄や亜鉛が豊富なため貧血予防にもいいですね。
